Wintertime can be  great for shipping frozen meat, so I've at last established some shipping rates, so you can make decisions regarding the possible purchase and shipping of beef and/or lamb direct to your home or business via Fedex.
For those of you in the midwest, shipping rates are very reasonable.  (FEDEX RATES ARE GOING UP 5.9% after the 4th of January)
1 & 2-day ground (no product protection) - $25
2Day shipping with protection - $55
Overnight shipping with protection - $75 - $125 (range - please contact me directly with your postal code)
For those of you in the 3-day ground shipping area, there is a huge range of shipping charges, so you'll need to contact me directly with your postal code.
3-day ground (no product protection)  $35  (expect a bit of thawing on some packages)
2Day - with protection - $85-110
Express Saver (3-day with protection) - $60-$85
Overnight standard with protection - $130-$145
Shipping via ground means you take the risk of product loss for any reason.  Even if Fedex loses it, runs over it, or crushes it, they will not insure frozen product when shipped at the ground rates.  Thankfully, we have never had a loss on any shipment via Fedex.  Shipments need to go out on Monday for 3-day shipping,  Monday or Tuesday for 2-day shipments, and as late as Wednesday for 1-day.  This gives us at least one buffer day before the weekend.  Fedex drivers may put packages back on the truck for attempted delivery the next day if there is no one home or there is no notes or arrangements made to receive the package.  We use freezer packs to help keep the meat frozen since dry ice is a hazardous substance and incurs higher shipping fees.  And, we don't have access to dry ice anyway.
Some changes in beef offerings you may like to know about:  Delmonico roast (aka ribeye roast) will be available,  Rolled, deboned rump roast, whole Brisket, and Sirloin Tip Roast.  (the weights of these cuts won't be known until i pick them up next week).  Consider those options, along with our ground beef in 1 lb logs, beef sausage in 1-lb logs (no pork added),  beef sausage breakfast links (in natural lamb casings, no pork), cubed steak, and stew meat, both in 1-lb pkgs.
Lamb offerings are ground lamb, lamb sausage, (both in 1 lb logs) and lamb sausage breakfast links, made with natural lamb casings, no pork (about 1.7 lb per tray). 
Some people are looking for certified organic meats and we are not it!  We are not certified, however, we exceed the USDA organic standards in all areas EXCEPT we do not have access to a certified organic butcher shop.  Thus, no matter how organic we are, we cannot have our meat 'certified' organic.  Several of you have made the trip out to our farms and seen this for yourself, and thank you for coming - we do live a fair ways from most of our customers, so it is a commitment to come out.  For those of you who do live too far away or don't have time, please continue to ask questions which are important to you in finding out how our animals are raised and handled.  You may click here to find the main story, and links to frequently asked questions, but feel free to ask anything we didn't answer in our write-up.

Wintertime (in the northern hemisphere anyway)  is also great for wool socks, blankets, throws, and covers. 
Wool socks are comfortable and warm.  Maybe you don't want to wear them all the time, but they are great protection against cold floors and with no bindings, wonderful for sleeping in.  Many people, including myself, have experienced great healing in cracked, sore, distressed feet by wearing 100% wool socks.  It was a huge surprise to me when my feet healed up in two weeks after wearing wool socks after being cracked (to the point of being lame sometimes!) for nearly 8 years.  Obviously, I'm a believer in wool.
If you have a larger budget, consider our heirloom-quality 100% wool blankets or 100% wool throws as gifts.  We've had men stop by, e-mail, or ring up and say "pick out seven (or whatever number) for the important women in my life, wrap them up for me -- shopping done.'  Jessica's orthodontist surprised all his office employees with a blanket of their own - and it was in the middle of the year!  These make very considerate 'thank you' gifts.  We've done that ourselves as well as other customers, and the recipients are always very appreciative.

Egg Nog is available now for a short while, but here's a recipe you can whip up yourself anytime of the year and avoid the HFCS (high fructose corn syrup), gelatin, natural and artificial flavours (whatever those are).  But, yeah, it's still got sugar.  This can be made with honey, but the flavor is different.  I'm also thinking of trying to add a teaspoon of whey as a preservative.  Whey is a milk derivative and can be collected at home.


1 quart real milk
4 farm-fresh egg yolks
1/3 cup sugar or 1/4 cup honey
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon vanilla


Heat milk to 160 degrees F. Add one-cup hot milk to egg yolks, and then blend into the remaining milk. Add sugar (or honey), spices, vanilla and reheat to 160 degrees F. With no preservatives added, plan to use this holiday drink within 24 hours. Keep refrigerated.
